Apricot Chicken Drumsticks Recipe

Ingredients

Chicken Drumsticks:

          ◦        6 chicken drumsticks

          ◦        1/4 cup Verde Valley Extra Virgin Olive Oil

Apricot glaze:

          ◦        1/3 cup of Apricot preserves

          ◦        2 tablespoons of brown sugar

          ◦        1/2 teaspoon of lemon juice

          ◦        a dash of red pepper flakes (add more or less to your preference)

Direction:

          ◦        Preheat the oven to 450°

          ◦        Place the chicken on a sheet pan.

          ◦        Drizzle with Verde Valley Extra Virgin Olive Oil

          ◦        Season with salt and pepper on all sides

          ◦        Back chicken drumsticks for about 25 minutes

Glaze:

While the chicken is baking, it is time to prepare the glaze. In a small mixing bowl add apricot jam, red pepper flakes, and lemon juice. Mix well.

Remove chicken from the oven and brush the glaze all over. Heat the broiler, then broil the chicken for 3 to 5 minutes.
