- 2 cups cherry tomatoes, halved
- 1 teaspoon finely grated lemon zest
- 2 tablespoons fresh lemon juice

- 1/4 cup chopped fresh basil or parsley
- 1/4 teaspoon crushed red pepper flakes, optional
- Salt and freshly ground black pepper
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of well-salted water to a boil. Cook the pasta until al dente according to the package directions. Reserve 1/2 cup of pasta water before draining.
- While the pasta cooks, warm 2 tablespoons of olive oil in a large skillet over medium heat. Add the tomatoes and cook for 4 to 5 minutes, until they soften and begin to blister.
- Reduce the heat to low. Add the garlic and red pepper flakes, if using, and cook for about 30 seconds, just until fragrant.
- Add the drained pasta, lemon zest, lemon juice and 1/4 cup of reserved pasta water. Toss until the pasta is glossy and evenly coated.
- Remove the skillet from the heat. Add the Parmesan and herbs, tossing again. Add more pasta water a tablespoon at a time if the sauce needs loosening.
- Finish with the remaining tablespoon of olive oil, season to taste, and serve immediately with extra Parmesan.
